Hello friends! This weekend we watched some cool recipes on a few Youtube channels and we decided to try one of the recipes. So we chose tomato soup because this receipt reminds Stefan of childhood, the tomato soup his grandmother used to make.
So here is our own improved version of…
Tomato soup with Parmesan and toasted bread with cheese and garlic
The ingredients you need for this recipe are:
– 1 BIG can of pealed tomatoes
– 1 medium onion
– 3-4 garlic cloves
– 2 morsel of bread
– some olive oil
– water (variable quantity depending how thick you want your soup to be)
– oregano and basil
– paprika and chili
– salt and pepper
– optional : rasped Parmesan
Now let’s go to the preparation of this soup … so easy to prepare!
Chop the onion and the garlic cloves, heat a pan with some olive oil and fry the chopped onion and garlic until they get a golden color, add also the paprika, chili, salt and some pepper. Add then the pealed tomatoes and the spices (oregano, basil or other spices if you like), add also the 2 bread morsel into the pan, add the water, put a lid on top and let the soup boil for about 20-25 minutes to medium heat.
When the soup is boiled just add it into a blender and blend the ingredients for 1-2 minutes so you get an even mixture. If the mixture of the soup is to thick you can add some boiling water.

Now the soup is ready, you need to make the toasted bread, just take any sliced bread you have in house, add some cheese between 2 slices of bread and toast the bread into a pan with some olive oil on both sides until it gets brown on both sides and the cheese inside starts smelting. Get a garlic clove and rub it on the toasted bread so it will fill it with garlic flavor.
Before serving the soup you might want to add some rasped Parmesan on the soup.
